When it is Avocado season, I go mad using avocados in every possible recipe. My dear husband is flabbergasted because the only recipe per him, that does justice to an avocado is Guacamole. Inevitably there is always a batch in the fridge for him, but I need more creative uses for the lovely stone fruit.
Yes, I’ve been lazy again. But it was the lazy people that invented the wheel and the bicycle because they didn’t like walking or carrying things (Lech Walesa). In my case, as established before, I hate kneading bread. I probably need the arm exercise but it just bores me to pound around a ball of dough. Maybe some people use it as a form of stress relief, but I can think of more creative options to gain back my sanity. So it’s not very surprising that I’m always on the hunt for things that say no-knead. If there’s no need to knead (ha ha ha), I’m in!
I have a weakness for Potatoes. So much so, that I think it’s my favorite vegetable in the whole world. I remember coming across a meme on the Internet that echoes my sentiments – “Potatoes can be used to make Fries…and Vodka. Other vegetables – please get your act together!’. There’s nothing that gives me greater joy than a bucket full of golden, salty fries or a bowlful of creamy Potato Salad, even a simple Aloo Jeera will lift my spirts up!
This salad makes my heart sing. You know when you start to assemble a jig-saw puzzle and finally all the pieces fit together? – Same feeling! The star of this salad is a lovely Danish Blue which when paired with Pomegranate, is a cracker of a combination. A lot of people can’t stomach Blue Cheese, but I just adore the pungent, salted butter and yeasty flavor.
There was a certain phase in our married lives that the co-resident was bent upon buying a Bread Machine. His very macho Columbian Boss had nonchalantly stated that he bakes his own bread every day in his nifty bread machine. The co-resident was immensely impressed (or was trying hard to impress his boss) and insisted that we get one as well. Considering our staple diet at home is rice, I successfully steered his mind away from such frivolities using endless arguments hard logic. After a couple of years though, I wish I hadn’t thwarted his grand plans.
It’s an oxymoron, Salad Pizza. But seemingly disparate things do seem to find a place in my heart and my kitchen. I can’t really take credit for this pizza idea. I chanced across this in a darling little pizza joint that’s opened close to my house. (Review soon enough…). Tomatoes and Arugula on a Crisp Pizza base! With the recent bumper luck of arugula availability at my door step – it’s also super easy to make.
Bisi Bele Bath – the Kanndigas answer to dal kichidi, but with so much more pizzaz! As a Bangalorean, you can’t escape this dish – every Udupi restaurant or darshni worth its salt, will inevitably list it on its menu. There is nothing more satisfying or comforting that digging into a plate of steaming hot (bisi) lentil rice (bele bath). The accompanying chips, mixture or boondi just adds to the heavenly experience. And to top it all off is Ghee…the mother of all flavour enhancers and my personal favourite fatty item 🙂
When I hear the word Caponata, the first thing that pops into my head is a Godfather-esque movie that has its origins in some remote fishing village in Sicily. For all my romanticism with gangster style movies, this Caponata is actually quite harmless. Dark, Complex, Delicious and even originating from Sicily…but definitely harmless.
