Old Fashioned Carrot Cake

If someone told me a couple of years ago, that I’d be making a carrot cake at home and polishing it off with joy, I would have guffawed. First of all Carrots Cakes are so old fashioned. It reminds me of somebody’s grandmother baking it and inviting her bridge friends over for tea. I don’t really remember ever ordering it myself at the local bakery or even trying to make it at home. If I was offered Carrot Cake at a friend’s place I would vehemently refuse a slice. A Cake with veggies in it was clearly not my idea of dessert.  

Cranberry & Chocolate Chip Wholewheat Muffins

Cranberries are not grown in India. So all those gorgeous recipes with Cranberries in them were pushed to the back, because let’s face it – I don’t want to pay an arm and a leg to import them. Nor do I want to grab onto someone else’s arm or leg and beg them to get some from their trip abroad. The dried version however IS available here and I recently happened to pick some up for the heck of it. Foodhall offeres two types – one that looks all red and juicy (which is what I would expect a cranberry to be) and the other which looks like a mini blueberry. Of course I gravitated to the more familiar one, only to be told that they were not whole cranberries and are treated to some extent, with sugar and color to make them pretty and sweeter. Masterchef Australia can be credited with starting a revolution that completely altered that way that anyone approaches food. It has within the span of three years turned the nation (and I mean India here) into a completely food obsessed one. Not that we were not connoisseurs of the good stuff already, but the appreciation and knowledge of a variety of cuisines and techniques definitely stems from there. The regular dal-chawal eating home was now attempting to get a perfect crust on their pie!  Dinner time (the holy thread that bonds us in an Indian family) was moved to an hour earlier, so that we could all sit down to watch Masterchef at 9:00 PM. Cinnamon Sugar Muffins

Some things in life are simple. 1+1=2, beach + margarita = holiday and cinnamon + sugar = awesomeness! When I chanced upon this recipe, I was skeptical. The ingredient list was small. The process was easy. And the final product seemed very basic. But the more I kept thinking about the muffin that’s going to be coated with cinnamon sugar, the more I wanted to make it. Chocolate Torte in Twenty (Flourless Chocolate Cake)

I know I’m a day late, but Merry Christmas nevertheless! I had planned to put up a Christmassy recipe, but after seeing the blogosphere jam packed with everything plum pudding-y and fruit cake-y and mince meat pie-y, I decided otherwise. I’m no expert in this area anyway, so why bother trying?! Ultimate Chocolate Banana Cake with Dark Chocolate Ganache

Oh Man! There’s so much chocolate in this recipe and its soo moist and googey and yummy. I kid you not! It’s now my TOP chocolate cake. Ok, I know it says banana in the title, but don’t let that scare you away. All the banana does is make it unbelievably moist (just like a fantastic patisserie bought cake) and add a faint banana sweetness. I realized that banana in a chocolate cake is not such an odd combo. I ordered a slice of royal banana chocolate cake at the California Pizza Kitchen and was totally transported to heaven. So I looked high and low for a similar recipe and finally found a Joy of Baking one that looked and sounded delicious. The recipe is super rich and makes a huge cake for 12 people. This means not only do I have a fail safe recipe, but one that tastes un-freaking-believable, and feeds a lot of people at the same time…I am really in cake bliss! Savoury Breakfast Muffins to wake you up!

It’s nice to have a good savory muffin in one’s repertoire. (Not that I would ever tire of cupcakes!). But some mornings need a nice wake-me-up-punch and if I load myself with sugary delights, I know I’m going to crash by midday! So this one’s a lovely cheddar and spinach muffin with the red chilli adding the right amount of spice. It feels really healthy because its got veggies and milk and just 3 gms of butter per muffin! (Almost felt like a subway advert there – less than 6 gms of fat!). It’s also really easy to make – just combine the wet and dry ingredients and bake! I would suggest eating these warm (not hot) so that you can still feel the gooey cheese. I like to throw on some Tabasco on top, because I’m crazy! Good Morning darlings… I’m sure going to have one! Marble Cake and An Ode to Casa Piccola

This might be very Bangalore centric but I’m sure anyone who’s seen one of their favorite/old eateries shut down, can connect to what I’m saying. Casa Piccola has be serving Bangalore fun and affordable European cuisine from 1979 and the Devtha Plaza location was definitely all the school and office goers favorite. If there was one place I remember frequenting as a kid for burgers and pizza’s and spaghetti – it was Casa’s. Many a date has been arranged here, with the friends sitting at the next table and sniggering away, while the poor boy was left wondering whether he did something wrong! If there is one restaurant that I’ve actually eaten every dish on the menu – it was at Casa’s. We even knew the waiters by name and some of them have worked in the establishment forever and a day. My favorite dish was Pasta Fungi – Pasta and mushrooms in a white sauce. (As a child with limited French vocabulary I was afraid to order it because I assumed Fungi = plural …
