Easy Grilled Chicken with Pasta

The grill pan is one of my favorite kitchen treasures. It lets me (almost) replicate the look and taste of an outside grill, right on my stove-top. I’m all for shortcuts and making life easier, so you well know how this fits into my lifestyle 😉 Another thing that makes life easier is ready-made sauces – for the life of me, I can’t imagine slow simmering some BBQ sauce over 12-14 hours! I have better things to do, like read a juicy cookbook or go grocery shopping for exciting ingredients! Now, there’s two kinds of grocery shopping I indulge in. The first one is running to the local kirana store (doubles up as exercise) for curry leaves or a loaf of bread and the second is where I make a huge list and plan an exciting day at a large and well stocked supermarket. (yes, I’m sad like that). Foodhall @ 1MG Road, has been a regular haunt to pick up all things interesting – wasabi paste…check, gnocchi…check, tarragon vinegar…check, Ras-El-Hanout…check, an elephant…check (ok, just …

Grill Fest @ Polo Club (The Oberoi, Bangalore)

Let’s say you had a chance to dine under the stars in a beautiful garden with the sound of a gurgling fountain in the background. Let’s say you had the finest and freshest produce laid out in front of you. Let’s say you had a very accomplished chef manning the grill to keep you company. And let’s round off this hypothetical situation with one talented mixologist who wouldn’t stop impressing you with exciting cocktails. Wouldn’t you rush to be a part of this? Well, lucky for you this scenario is not something I cooked up in my overactive imagination. Polo Club at The Oberoi ensures you will have a lovely evening at their Live Grills Festival. I was invited for an evening of grills, cocktails and fun conversations (the last part we rustled up ourselves) and left the evening a little more light headed then when I arrived. Polo Club is a place that fits perfectly with Bangalore’s Garden City tag. And it really is a joy to dine alfresco in a city that is …

Grilled Red Pepper Pate Crostini

Better late than never I say.. So here’s my grilled pepper pate recipe which I promised to share last month. Pâtè is a fine textured spread or paste. The term also applies to mixtures that have been baked or sautéed, then pureed to a creamy consistency. Pâtè is generally served at room temperature either spread on bread or crackers as finger food. Here we use the pate liberally on French bread and grill with cheese to produce a colorful and bursting with flavor starter. This pate will keep in an airtight container for upto three weeks. So Bon Appétit! Grilled Red Pepper Pate Crostini Prep time: 10 mins Cooking time: 35 mins Makes 1 cup What you need: 4 large Red Peppers 3 cloves Garlic, unpeeled 2 Tbsps Balsamic Vinegar 1 Tbsp Sweet Chilli Sauce 150gm Butter (melted) Pinch of Sugar 2 tsps finely chopped Parsley 1 loaf French bread 100 gms Cheddar cheese Handful of Basil leaves to garnish What to do: Preheat oven to hot 240ºC.
