Roast Chicken Drumsticks in a Pomegranate and Honey Pepper Marinade

I know the title is mighty long and a simple Anardana Chicken would have cut it, but where’s the fancy shmancy in that?!  I’ve never really found a recipe with pomegranate that caught my attention till today. Always ate Pomegranate by itself or sprinkled over a salad. I know using pomegranate and chicken together might jolt some of you, but trust me and carry on reading.  This recipe from the Good Food magazine, seemed too simple. It made me doubt whether that was all there was to it.  I love pomegranates and have always known heard that we use dried pomegranate powder (Anardana) in Indian cooking. However,  the spice mix in this recipe seemed very Middle Eastern and I had a niggling feeling that this maybe Moroccon! I read the ingredients thrice over before finally deciding to go for it! (After all, as the magazine says – Every recipe is thrice tested, so how badly could I screw up?). So how did it finally turn out? It was Fantastic – moist, juicy, peppery and tangy. Excellent bang for the buck. It’s something …

Easy Stir-Fried Vegetables

I always believe that good Chinese food can never be replicated at home. Our palate has been assaulted by MSG and extra salt in every Chinese restaurant, that we have now acquired a taste for it! That’s why every time I try Chinese at home; I’ve already resigned myself that the recipe is going to be equivalent to a pirated DVD! My fear of ODing on MSG and Salt has prevented me from achieving greatness in my quest for restaurant Chinese. (By restaurant I don’t me the fancy 5 star’s…am sure they go easy on the MSG). Am I sad? Au contraire… I actually like the fact that I can indulge in dangerous liaisons only once in a while (OK, I actually eat Chinese almost once a week… but you get the drift!). Coming to the point … this Stir-Fried Vegetable recipe is really easy and tasty. (Cross my heart!). It takes care of the mid-week Chinese craving quite well. Toss in some Chicken or shrimp if you fancy and you’ve taken it to another …

Onion Pakodas – For the Rains!

Monsoons! You either love it or hate it. I belong to the latter category. I know poems have been written about the rains and how it raises the spirits and blah blah blah. But clearly this is the work of someone sitting in the comfort of their homes and blabbing about the elements without experiencing its fury! For the ordinary man/woman who rides a bike to work or who needs to walk to a bus stop the monsoons are nothing but havoc to their plans and clothes and shoes might I add! I am always game for the occasional bout of rain, but five whole months of it??? Spare me the romanticism. Give me one person in Cherrapunji who’s waxed eloquently about it. Comon, think. No? There, I rest my case. Familiarity breeds contempt! It’s only freaking fantastic if you are a farmer looking for the rains for a good crop or someone in a really hot place who needs the spell of rain to cool the temperature down. Bangalore clearly does not need five …

The world’s best Hot Wings!

I know people exaggerate when they say something is the world’s best. You’re thinking, a.Their world is really small or b. They have false ideas of grandeur. I have fallen prey to both statements many many times, but (and this is a big BUT) Not this time!!! Firstly, I can say with conviction that if there is a restaurant I have visited and they list hot wings on the menu – I have tried it. And I eat out very often. So my world of hot wings is not small. Secondly, I am in no way partial to any food, so if something blows my mind – it firmly earns it’s place in my heart and taste buds! As these Hot Wings satisfy the above criteria – they are, according to me (and my entire clique of hungry friends and family) The World’s Best Hot Wings!  Hot Wings/ Buffalo Wings Prep + Marinating time: 1 hour Cooking time: 20 mins Makes: 20 wings What you need: 3/4 cup All Purpose Flour 1 tsp Salt ½ …

Chili Chicken – Indian Chinese Style

This recipe might not be understood by everyone. I say that with confidence, because to understand this recipe, you needed to have eaten Indian-Chinese Cuisine. You probably won’t find it listed even if you look hard in the dictionary. Fact is, its not got much of Chinese in it other than the soy sauce and stir fry technique. But as a nation we love this so much, that we’ve given it a top three slot in our hearts. 80% of our everyday restaurants will list themselves as, ”Serving Indian, Mughlai and Chinese”! And that my friends, is the ONLY way to stay in business! The most popular dish of this marvelous collaboration is of course the ubiquitous Chicken Manchurian. (And its vegetarian cousins – Gobi Manchurian and Paneer Manchurian). However another post shall sing its glory, but for today it’s the Chilli Chicken’s place in the sun! Chilli Chicken – Indian Chinese Style Cooking time: 25 mins Marination time: 2 hrs Serves: 4 What you need: 500 gms of Boneless Chicken cubes For the marinade: …

Zesty Roasted Broccoli

I like broccoli. No, its not crazy. I just know how to appreciate something that’s gonna help me look svelte. Ooh… so NOW I have your attention. The last time I did broccoli, was with penne. (click here) It does taste fantastic but now I’m a convert and the only way to bring out all the awesome flavors is to roast it!! Maybe we should make that a commandment. ‘Thou shall roast your broccoli before thou savors it!’ And while we’re at it, let’s also add ‘Thou shall not obsess about thy weight!’ That will help when you reach the last line of the ingredients – I recommend generous shavings of Parmesan. Oh come on, isn’t the broccoli working overtime to burn calories?? Roasted Broccoli Cooking time: 25 mins Prep time: 5 mins Serves: 4 as side, 2 as main course What you need: 2 heads of Broccoli (cut into florets and dried thoroughly) 4 Tbsp Olive oil 1 ½ tsp Rock Salt ½ tsp freshly ground Black Pepper 8 Garlic cloves. sliced 1 Lemon (zest …

Prawns in Garlic Butter

Like most seafood dishes this one is non fussy and just divine tasting. Well, the fate of anything doused in butter is sealed – the final result has to be Fantabulous! I use fresh prawns which I clean and devein myself… yes its fishy business, but somebody’s got to do it. Frozen prawns are fine as well, but it tends to be less juicy. Prawns can be just as easily substituted with mussels, lobster, crayfish or calamari. You can eat this as a starter or serve it on top of homemade fettuccine. Either way it’s a weekday winner. Well anything you can whip up in 10 minutes flat should be right?? Prawns in Butter Garlic  Prep time: 5 mins Cooking time: 5 mins Serves: 4 What you need: 400 gms Shrimp 4 Tbsp Butter 25-30 cloves Garlic 1 Tbsp Mustard paste 1 Tbsp Lemon Juice 8-10 Peppercorns A few sprigs Parsley Salt (if needed) What to do: Wash and drain cleaned shrimps thoroughly. Chop parsley finely, keep aside. Crush peppercorns. Grind garlic to a rough …

Baked Eggs with Tomatoes

First of all I would like to apologize to my beloved food – The Egg. I’m surprised I haven’t done a post on it as yet! Eggs are so versatile and so tasty and kind of a staple in the diet, so it’s easy to overlook them. Egg whites are often considered the perfect source of protein because the body uses 100 percent of the nutrients they provide. Plus they are free of saturated fats and excess carbohydrates. The egg yolk (the best part according to me) is jam packed with nutrients. There is a controversy with the cholesterol bit, but the doctors are changing their stance now to saying its OK to have about 4 yolks in a week. So there, we’ve tackled that bit. Remember when we were kids and we had half boiled eggs in a cup? Well, this is the more sophisticated adult version. According to me, serving anything in a mini ramekin is très chic 🙂 Baked Eggs with Tomatoes Prep time: 5 mins Cooking time: 15 mins Serves: 4 What …
